'Zhitnitsa' Flour Enhances Taste of Natural Additives in Bakery
OREANDA-NEWS. On 31 August 2009 was announced, that in the past few years, confectionery producers and bakers have seen a number of changes in the eating habits of a Russian customer. Today, preferences are shifting towards either ready confectionery and baked goods with various additives: nuts and sunflower seeds, raisins and candied fruit, spices and herbs, or semi-finished products of such kind.
Considering the market trends, Russian grain processor PAVA has researched behaviour of the new wheat flour grade 'Zhitnitsa' in these goods. It appeared to strongly enhance the activity of natural additives and flavouring agents, even if used in a flour mix.
“We started to produce 'Zhitnitsa' less than a year ago, and although shipments are already carried out to many Russian regions and neighbouring countries, we are still actively researching properties of this unique product. Technologists continue to suggest new applications, besides, it is being tested immediately in the production process”, comments PAVA Director General, Andrey Ananin.
