Zhitnitsa Flour from PAVA Seen as Ideal Ingredient for Kvass Drink
OREANDA-NEWS. On 10 August 2009 was announced, that the flour Zhitnitsa recently developed by Altay grain processor PAVA is getting a widening popularity with manufacturers, as they include the new product in more recipes. After it has been successfully incorporated in production of gingerbreads, delivering delicious taste and longer freshness, the new application where Zhitnitsa is to be tested is the base for kvass drink.
Kvass is a traditional Russian drink, made from fermented bread, often flavoured with fruit, berries and herbs. It has a special aroma and excellent refreshing qualities. Zhitnitsa, uniquely rich in vitamins B1, B2, iron, nicotinamide and tocopherol, has been singled out by bakery plants as a great enhancer for the health benefits of finished goods. They note that this flour improves qualities of kvass as a valuable dietary product.
The milling technology used by PAVA for manufacturing of Zhitnitsa allows to preserve live grain cells in the flour, yet its behaviour in the production process does not differ from traditional flour grades.
Importantly, bakers and confectioners gain a considerable economic advantage incorporating Zhitnitsa in production, since it is marketed in a low-cost product category.
